“Choi Bon Hai” (Crab Racing)

This is one of the most popular northern Chinese dishes. When we were kids, my parents always ordered this dish in the restaurants for us. And we always felt that we never had enough. It is called “Choi Bon Hai” or “Crab Racing” if translated directly. Why is it called in this way? I really don’t know. But I guess that the cooked egg white looks a lot like the crab meat. And it’s like you must work fast to get a lot of meat out of the crabs so that you can feed a big crowd.

Ingredient
2 Cups Store-Bought Egg White/8-10 Egg White (depends on the size of the eggs)
½ tsp Bacon Bits

Seasonings
½ tsp Salt
1tsp Corn Starch
1tbsp Water
3tbsp Oil

In a mixing bowl, combine corn starch and water first
Mix it very well to be slurry
Add egg white and salt and whisk

Preheat a big shallow non-stick skillet at medium high heat
Add oil and egg white mixture
Keep stirring until egg white solidified
Transfer to serving plate and sprinkle bacon bits on top and serve

TIPS

It may not look like there is a lot. But it can fill you up easy.
Traditionally, save one egg yolk and add it at the middle of the dish. When it is served, poke the yolk, mix well and serve.

Serve 4-6 people
