Salad with Avocado Salad Dressing

Ingredients
1 Avocado
1 Head Iceberg Lettuce (cut into small chunks)
2 pcs Roasted Red Pepper (chopped)
4-5 pcs Sundried Tomatoes (chopped)
1 Seedless Cucumber (diced about ¼”)

Seasonings
1 Lemon (juiced)
¼ cup Mayonnaise
5 tsp Sugar
1 pinch Salt
1 pinch Black Pepper
1tsp Yellow Mustard

Cut avocado into halves and use a spoon to take out the seed and discard
Spoon out the meat and cut it into small chunks
Transfer avocado into a mixing bowl and add the rest of the seasonings in
Stir to combine
While stirring the dressing, mash the avocado
Taste to adjust the flavor of the dressing

Transfer the rest of the ingredients into a salad serving bowl
Pour the avocado salad dressing on top
Toss to coat and serve

Serve 4-6 people
