Gas price has gone down a lot. But the grocery is still very expensive. If you have a big family or need to feed a crowd very often, do you feel that there is a lot of pressure? I always try to think about ways to get a good budget and fill up the bellys of my guests.
Quiche always reminds me about a traditional Chinese dish, steamed egg. Instead of adding milk and bake, Chinese adds water and steam it. But I always had the hard time to figure out how to bake a quiche and the crust doesn't go soggy. I happened to read a recipe in a magazine that I finally grabbed the trick of how to make a quiche. These are the basic ingredients 6 eggs, 2/3 cup of milk and 1 cup of cheese. You can put any stuffing without limitations, except your imaginations.
I went back home and looked for the staples in my fridge. Then, this recipe was created. Hope you enjoy this quiche as much as I do.
Ingredients
1 9-inch deep dish pie crust
6 Eggs (beaten)
1 Cup Shredded Yellow Cheddar Cheese
2/3 Cup Milk
1 Pack (8oz) Pre-cooked Breakfast Sausage Links (diced)
1 ½ - 2 Cups (about 8oz) Store-Bought Roasted Potato Wedges (frozen)
1 tsp Dried Parsley Flakes
Seasonings
1 pinch of Salt
¼ tsp Black Pepper
Preheat oven at 325F Bake
Heat the saucepan at medium high to high heat
Brown sausage in the pan
Add potatoes and stir
Cook until the potatoes thawed and a bit warm
Add black pepper and stir to combine
Turn off the heat and remove the pan from the heat source to cool down a bit
In a separate mixing bowl, beat eggs, milk, salt and parsley together
Put the pie crust on a baking sheet in case the filling spilled for easy clean up later
Transfer sausage and potatoes into the crust and spread out evenly
Top cheese on the sausage and potatoes
Pour in the egg mixture
Bake in the oven for 25 minutes in the middle rack until a knife inserted at the center and come out clean
Let sit for 3 minutes and serve
Serve 4-6 people
TIPS
The sausage and potatoes are very salty. So, go easy with the salt.
If 25 minutes are not enough, bake for another 5 minutes and check it again.
Can be doubled.
Most of the ingredients in this recipe were bought in big quantities which allow you to make two quiches. If you serve brunch for a big crowd, make 2 of them. Including the coffee and other drinks, you can serve 8-12 people within $20. Doesn’t sound great?
