Beets and Mandarin Orange Salad

Ingredients
1 Can (15oz; drained) Cut/Whole Beets
1 Can (15oz; drained) Mandarin Oranges

Seasonings
1 splash of Red Wine Vinegar
1 tsp Frozen Orange Concentrate
2 tbsp Extra Virgin Olive Oil
1 pinch of each Salt and Pepper

Combine all the seasonings together for salad dressing
Add beets in and let them marinade for 5-10 minutes
Add oranges and toss and serve

1 Serving

Tips
Transfer the remaining frozen orange concentrate to plastic container and store it in the freezer
Salad still tastes good without salad dressing.
Can be doubled
