I love the texture of gnocchi. It always reminds me a kind of Chinese noodles, called the Shanghai style Chinese New Year Cake.
Spinach is the stable in my kitchen all the time. And I specially incorporated into my pregnancy diet a lot because of its nutrition values.
Ingredients
1 LB Frozen Gnocchi
2 Boxes (10oz each; thawed and squeezed out the excess liquid) Frozen Spinach
1 Box (8oz; diced) Pre-cooked Sausage Links
Seasonings
1 Pot of Water
1 ½ tsp Salt (divided)
1tbsp Oil
1tbsp Extra Virgin Olive Oil
¼ tsp Black Pepper
Bring a pot of water to a boil
Add 1tsp salt, 1tbsp oil and gnocchi
Quick stir and let it cook until al dente by following the package direction
Drain pasta
In a big skillet, heat extra virgin olive oil at medium high heat
Add sausage and black pepper to brown
Add spinach and ½ tsp salt
Cook until warm
Add gnocchi and combine and serve
Serve 2-4 people
Makes 2 big serving for expecting or breastfeeding moms
